I am trying this one tonight, guess I should have made it before posting it- but it looks wonderful, so here it is!
Cheesy Chicken and Broccoli Casserole
cut up 2 heads of Broccoli into florets
shred 1 rotisserie chicken
1 cup of mayo
2/3 cup of heavy whipping vream
1 tablespoon of chicken soup base
1 tablespoon of dill (fresh or dried)
1 teaspoon of black pepper
2 cups of shredded cheddar cheese
Preheat the oven to 350 degrees. Spread the broccoli florets evenly into a 13 x 9 cooking pan. Then cover with the shredded chicken. Layer half of the cheddar cheese over the top, pressing it down onto the chicken. In a seperate bowl- combine the mayo, whipping cream, chicken soup base, dill and black pepper. Spread over the chicken/cheese mixture and top with the remaining cheese. Spray a large enough piece of aluminum foil to fit over the top of the pan- then placing it spray side down over the casserole-securing the foil. Bake for 45 minutes, then remove the foil and put it back into the oven and continue baking until it is golden brown.
