Fresh homemade Chicken Cacciatore! This should feed about 4 people

With all of the fresh vegetables available now- you really have to try this delicious recipe (that actually tastes better the second day -if that is even possible) 

Get to your farmer's market, or walk out to your own garden and grab some freshly grown ingredients to get started.

In a skillet- heat some oil (not enough to fry, just a coating to help with the browning) and brown a whole (cut-up) chicken.

Add to the chicken, 2-3 cloves of garlic and 2 diced onions and cook about 2-3 minutes.  Then, add 1 large can (15 oz.) of Italian tomatoes, 4 diced green peppers, 4 diced stalks of celery, fresh mushrooms or a large can (well drained), 2 teaspoons of oregano and salt and pepper to taste.  Simmer for at least 30 minutes over medium heat. Some say this goes great with mashed potatoes!

Delicious one pot cooking. Easy one pot clean up!
