Mexican Street Corn Dip Recipe for your Fourth of July picnic!
Want to try something new to make your fourth of July celebration a little different? This Mexican Street Corn Dip adds just the right amount of sweetness with the right amout of heat- and it takes very little time to put together! This could become your go-to recipe for your neighborhood picnics, or for a football game get together halftime snack. If you would like to add a little more "kick"- just add a few drops of your favorite hot sauce- then enjoy!
4 cups of corn kernels (canned, frozen or fresh cut)
2 T. unsalted butter
1 jalapeno (seeded and finely diced)
3 T. mayonnaise
4 T crumbled cotija cheese (I add extra)
1/2 t. chili powder
2 T freshly chopped cilantro or parsley leaves
1 1/2 t. lime juice
1/4 t. garlic powder or fresh crushed garlic
Melt the butter in a large cast iron skillet. Add the corn kernels and the jalapenos and cook until lightly charred- stirring continuously for about 7-10 minutes.
Stir in all remaining ingredients and serve with tortilla chips. Enjoy!
